Ultimate Coconut Cake supports scholarships


The College of Graduate Studies is having its annual fundraiser – a drawing for a chance at the Ultimate Coconut Cake from the Peninsula Grill. Proceeds of this drawing will go to recruitment scholarships for the College of Graduate Studies PhD and MD/PhD programs. Since the fundraiser began the College of Graduate Studies has given out more than $7,000 in scholarships from its proceeds.
 
Tickets are available in the College of Graduate Studies Dean’s Office in the Basic Science Building Room 102. Tickets are $1 each or a book of 6 for $5. The drawing will be held on Dec. 17. For a look at the cake you can go to

In 2003, after having the Ultimate Coconut Cake at a party, the idea of using this popular cake to raise money for scholarships came about. Based upon his grandmother's recipe, the Ultimate Coconut Cake has been refined to frothy perfection by Peninsula Grill Executive Chef Robert Carter. The cake is 4" tall and 10" in diameter, serves 16 people or more, and weighs approximately 12 lbs. The retail value of the cake is $100.  
 
This cake is famous not just in Charleston, but has been featured in the New York Times, Bon Appetit, the Martha Stewart Show, Bobby Flay’s Throwdown and elsewhere on the Food Network.  It is not surprising that each year well before the tickets go on sale the College of Graduate Studies receives calls from those familiar with this fundraiser to find out when the tickets will be available.
 
Each year about $1,000 tickets have been sold, with an all time high last year at more than $1,300 in sales. The drawing has been held annually since 2003.
